This dish was an ancient recipe that farmers used to reuse dry bread. It is a hot soup of vegetables and bread, a genuine but nutrient-rich dish that reflects the traditions of the Apulian territory.

The “Pupurat”.

After toasting old traditions, don’t forget to have pupurat for dessert. A typical dessert of the Gargano made with a few simple ingredients: flour, sugar, almonds, cinnamon and cooked must.

Carpinesi beans.

What to eat on the Gargano: the most famous dish!

Among the things to eat on the Gargano there are certainly the dishes based on Caciocavallo Podolico. It is a cheese that derives from the milk of Podolian cows. This breed of cows is found in very few areas of Italy, they are kept free rather than in the stable. In fact, going around the Gargano you will see them grazing freely on the promontory. They feed on spontaneous aromatic herbs and this lifestyle of theirs not only makes the animals happier but also guarantees a better flavor to the products deriving from them. caciocavallo of gargano The podolian cows present in the south are less and less and this also increases the refinement of the podolian caciocavallo.

Traditional foods of Monte Sant’angelo

Monte Sant’Angelo is famous for its bread, a literally huge loaf! Its diameter is about 70-80 cm and the weight is 5 or 6 kg. It has a soft and compact texture with a crunchy crust. A bread with a genuine flavour. You will not be able to resist the scent emanating from the ovens in the narrow streets of the historic center!
